Ok, forgive the poor picture. Forgive the crack you see in my counter top, and for HEAVEN’s sake, forgive the shadow of Todd’s favourite All-Clad spatula in this photo. None of this matters right now. Trust me, none of it is worth discussing. What we DO have to talk about however is a SIX MINUTE DINNER! Yes, I’m talking REAL ingredients, FROM SCRATCH in only SIX MINUTES!!!! (and only 478 calories per serving WITH THE WINE!!! Send your best fact checkers to debunk this if you like…. we have tried to find a problem with this calorie count, but it is REALLY TRUE!)
Get your cast iron skillet heated up because here we go….. maybe we should just call these “quick fire” recipes….. Oh, wait, I’m sure there’s some Food
porn Network show who’s already used that term and subliminally seeded it into my brain. We need a new name….. ok. Todd’s “mini miracles” how does that sound?? Yup, that’s it. Mini Miracles. This shall be our new term for any meal that can be produced in less than 30 minutes. (oh, God, why do I create these things on the fly like this…. we already have a “casserole challenge” that we have to complete this week as well)!!!!
What you will need:
a hot cast iron fry pan
450g fresh yellow fin tuna steak (thick…1.5 inches thick to be precise)
200 g PURPLE brussels sprouts (yes ok, regular ones will work fine too….)
150g zucchini (you can use whatever colour you like, it tastes great either way)
1 tbsp olive oil
1.5 tsp crushed coriander seed (you can use powder instead if you like)
1 tsp fresh cracked pepper
1 tsp sea salt
1 clove minced garlic.
juice of one half a lemon
fresh lemon wedge
Combine coriander, oil, garlic, pepper and salt. Rinse tuna under cold running water, pat dry with paper towel. Gently massage the oil and seasoning mix into the tuna steak. Use some love, this great fish died so you could eat this wonderful meal, respect never hurts a meal ok?
Sear in hot pan (medium-hi to hi heat) 3 minutes each side (you may need to SHORTEN this time if your steak is thinner than 1.5 inches). Place zucchini cut side down into fry pan as well, allow to cook until there is some caramelization on it (the six minutes you are cooking the tuna is just perfect).
Once you have turned the tuna steak over, use that last three minute period to steam the brussels sprouts in the microwave…. 2 minutes on high in a plastic film covered dish (no extra water needed) is just about perfect!!
Once tuna is seared immediately place on plate and squeeze the juice of one half a lemon over it. Divide this monstrous tuna steak in half and prepare to serve…..
Now hurry up and plate that!!! you only have about 15 seconds left if you wanna call it a 6 minute meal!!! This recipe makes dinner for TWO. Oh, and don’t forget to serve with a wedge of lemon to squeeze some wonderful lemon juice over your tuna and brussels sprouts to enhance that flavour just a little more.
Oh, Just one last thing….. Pour yourself a nice cold glass of white wine. You deserve it after all, you just performed a “mini miracle.”
